Chef Niko Romito’s Colomba presents a gentle revolution to traditional Easter baking with a light, airy dove-shaped cake that takes 60 hours to perfect through three meticulous fermentation phases. The delicate almond praline finish creates a satisfying crunch against the soft interior, while raw beet sugar adds a subtle sweetness that speaks to both tradition and innovation.

CALLA EASTER EGGS
The experience extends beyond the plate through Bvlgari’s Easter Collection, where Maître chocolatier Gianluca Fusto crafts the Uovo Calla chocolate egg combining raspberry flavours with Eastery almond notes.
This architectural masterpiece draws inspiration from Bvlgari’s iconic Calla pattern, translating ancient Roman Baths of Caracalla mosaics we see in Bvlgari’s Divas Dream collection into modern chocolate goodness. Each egg reveals a surprise of almond dragées, creating a delightful discovery mirroring the joy of hunting Easter eggs in the garden.
